Working in first-class restaurants, cooks who have completed the Market Fresh Cooking program are creative and able to prepare original dishes and menus based on conventional cuisine. These professionals often use state-of-the-art equipment (e.g. high-precision, programmable cooking appliances often combining different functions, such as steaming and smoking). These experts in contemporary cuisine must be able to recognize and use bio-food products, prepare delicatessen foods and innovative dishes using regional, imported or exotic products. These specialized cooks must also be familiar with market-fresh cuisine. During their training, these cooks are introduced to both innovative and healthy cooking. Restaurants that offer both types of cuisine are rapidly gaining in popularity these days as customers become more health-conscious and demand innovative menus.

Persons enrolling in a program of study leading to an Attestation of Vocational Specialization (AVS) must hold a Diploma of Vocational Studies (DVS) in the trade or occupation corresponding to the desired program of study, or have been granted recognition of equivalent learning. OR They must already be performing the occupation or trade related to the desired program of study. There are no admission requirements for programs designed to help people start a business.
